  • 4 tablespoons olive oil
  • 1 large lime, juiced, or more to taste
  • 2 teaspoons garlic powder
  • 2 teaspoons onion granules
  • 1 teaspoon chilli powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1/2 teaspoon freshly ground black pepper
  • 10 skinless chicken drumsticks

  1. Combine olive oil, lime juice, garlic powder, onion granules, chilli powder, oregano, parsley and black pepper in a large resealable food bag. Add chicken drumsticks; turn to coat evenly. Seal bag, squeezing out all the air.
  2. Let chicken marinate in the fridge, at least 2 hours and preferably overnight.
  3. Preheat oven to 220 C / Gas 7. Line a baking tray with foil.
  4. Let chicken come to room temperature, about 25 minutes. Arrange on the baking tray.
  5. Roast in the preheated oven until browned, about 25 minutes. Flip chicken and baste with juices; continue cooking until browned on the second side, 10 to 15 minutes more.
  6. Cover chicken with foil. Let rest before serving, about 5 minutes.

Recipe Summary

  • 1 tablespoon minced garlic
  • 1 ½ teaspoons ground cumin
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • 2 tablespoons fresh lime juice, divided
  • 4 (6-ounce) chicken thighs, skinned
  • 3 tablespoons fat-free, less-sodium chicken broth
  • 1 tablespoon white vinegar
  • 2 teaspoons chopped fresh cilantro
  • 2 lime wedges

Combine first 5 ingredients in a small bowl stir in 1 tablespoon juice. Rub garlic mixture over chicken. Place chicken in a medium skillet.

Combine 1 tablespoon juice, chicken broth, and vinegar pour over the chicken. Place over medium-high heat bring to a boil. Remove from heat. Wrap handle of pan with foil. Cover and bake at 350° for 30 minutes or until a meat thermometer registers 180°.

Remove chicken from pan keep warm. Place pan over medium-high heat. Bring to a boil, and cook until reduced to 1/4 cup (about 3 minutes). Spoon over chicken. Sprinkle with cilantro, and serve with lime wedges.

Instant Pot Garlic Lime Chicken

I’ve had garlic lime chicken on my site for maybe 10 years as a slow cooker recipe and decided to try it out in the Instant Pot. It was a match made in heaven and reminded me of Instant Pot adobo chicken a bit. I decided at the last minute to make pot-in-pot brown rice to cook alongside the chicken. The rice and chicken were both perfectly cooked using a 22 minute pressure cooking time.

Most of the time we serve the chicken and sauce over rice but if you want you can serve with some Asian noodles or some steamed broccoli or green beans.

For this particular recipe I really like bone-in chicken thighs. I remove the skin before adding it into the pot (a personal preference). Boneless skinless chicken thighs will also work very well. Another choice is chicken drumsticks. Personally I would not make this recipe with boneless, skinless chicken breasts as it will not be as moist and tender. However if you choose to make it with breasts I would cut the chicken breasts into the size of chicken tenderloins and use only a 5 minutes cooking time with a 5-10 minute natural pressure release (rice wouldn’t be able to be cooked at the same time using this shorter cooking time).

Honey Lime Drumsticks

Best part of summer? Outdoor grilling! Can I make a confession? I do almost all the grilling at home. It’s not that Casey doesn’t want to. He totally wants to! But… I might be a bit of a control freak about grilling. Since I do all of the shopping and I know how much our organic meat costs, I’m like SUPER paranoid of over-cooking anything. When you’re grilling, you have to be ON IT. You can’t get distracted with ANYTHING…like outdoor speakers, drink mixing or stressful Red Sox games.

In order to excel at grilling, you have to have a good sense of time. You have to park yourself there and be patient. That’s the key to grilling. Grilling gives me a chance to sort of meditate and relax while sipping on a cocktail while I dodge basketballs & soccer balls Casey & Cooper are playing with. I really love it.

I paired these Honey Lime Drumsticks with Honey Butter Grilled Corn (recipe soon!) and a simple tomato salad dressed with feta, mint & lemon juice. It’s such a simple meal to throw together on a weeknight. Now what’s for dessert? How about some Lemon Blueberry Ice Cream Sandwiches? Yeah baby!

First we make the marinade. It’s super simple!

OK! Marinade. Mix everything together in bowl. It’s the perfect balance of citrus & honey.

Add extra flavor to the drumsticks by rubbing them with salt, pepper & the smoked paprika.

Pour the marinade over the chicken.

Let the flavors develop! Cover. Marinate!

Heat up the grill! Add the chicken. I added a few slices of lime to the grill to grill!

Keep your eyes on the drumsticks!

This honey lime chicken recipe turned out to be a perfect 10. It&rsquos absolutely moist, juicy, tender and utterly delicious. The honey, lime, soy sauce and garlic marinade do wonders to the chicken.

Roasted Chicken Legs with Lime

I had some extra chicken legs thawed in the refrigerator that I didn’t use when I recently made my chicken soup for myself while I was sick. I still wasn’t feeling well and I needed something simple and easy to make using the ingredients that I already had at home, as I still wasn’t feeling up to going to the supermarket. So, I was thinking all night what I could make with them and the result were these chicken legs with lime.

They were delicious, packed with flavor and very easy to make and I only used a few ingredients. If you prefer, you can use chicken thighs instead. Enjoy!

Spicy Buffalo Lime Chicken Marinade

Yield: 6 servings

Charred-tender chicken marinated in a simple, zesty, buffalo dressing. The marinade has the perfect amount of spice combined with the perfect amount of zest this will quickly become your family’s new favorite chicken marinade!


2-3 lbs of chicken (breast, thighs, drumsticks, wings

bone-in or boneless)
1/2 cup Frank’s RedHot Original
1/4 cup olive oil
1/4 Cup lime juice
2 cloves of garlic, minced (about 1 teaspoon if you are using it from a jar)
Lime – cut into slices, for serving

Garlic Lime Chicken Wings with Honey

Garlic Lime Chicken wings are the best with lots of garlic, a dash of lime and dripping with the sticky sweetness of honey! Grab some wings and a ton of napkins unless you want to lick your fingers clean.

It&rsquos no secret that I love the smell of garlic, onions, and olive oil simmering in a pan. If I could bottle the scent, I would put it on my wrists every day!

I&rsquom not sure if I would attract men or flies but I would be happy with the smell. I might forget to put on deodorant, but I would wear that! These garlic lime chicken wings are born from that smell.

Lots of garlic keeps the mosquitos away, at least that is what I keep telling myself as I shovel it in my mouth. I even smell my fingers throughout the day after I chop a bunch of garlic just to bring the memories back.

This easy chicken recipe is always a party! Flavorful chicken drumsticks baked in lime juice and seasonings for a fun, easy dinner!


  • 5 pounds chicken drumsticks
  • 1 cup canola or olive oil
  • 5 cloves of garlic, smashed and skins removed
  • 1/4 cup fresh lime juice
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • 1 tablespoon taco seasoning
  • 2 (14.5 ounce) cans Ro-Tel, drained
  • Fresh lime wedges and fresh cilantro for garnish (optional)


  1. Add all the oil, garlic, lime juice, salt, pepper, paprika, oregano, cumin and taco seasoning into a bowl and whisk together. Add the chicken drumsticks to a resealable plastic bag and then pour in the marinade.
  2. Shake the bag around to cover all the drumsticks then place in the refrigerator for up to 8 hours.
  3. Preheat the oven to 400 degrees.
  4. Spray a skillet with cooking spray and heat over medium high heat.
  5. Remove the drumsticks from the marinade and wipe off each drumstick with a paper towel removing most of the marinade.
  6. Brown in the skillet for 5 minutes per side until browned then remove to a baking dish.
  7. Add the drained Ro-tel to the baking dish, cover and bake for 40 minutes.
  8. Garnish with fresh lime juice and cilantro if desired and serve.
