To shorten these times, I often use parboiled rice, which cooks quickly and remains "grain by grain", fast-roasted chicken, as well as canned mushrooms. Instead of chicken breast you can choose boneless thighs or turkey breast. The last two are juicier, more tender.

Being a diet recipe, I was careful when dosing fats (oil, butter). As a personal note, I did not use onions at all because I like the flavors of roast meat and mushrooms of this dish. If we use a fragrant rice like basmati then it's even better! It is not wrong to put onions - I indicated in the recipe when to put.

From the quantities below it results approx. 2-3 servings of chicken with rice and mushrooms.

1. Peel a squash, grate it and chop it without oil. After the water has evaporated, add a few tablespoons of oil and heat the mushrooms. Drain well in oil and pass through the mincer.

2. Onions, donuts and peppers are also passed separately through the mincer and left separately. Then drain.

3. Put the oil in a saucepan and cook the onion with salt. After soaking, add the peppers and donuts and cook for about 60 minutes. Then, pour the tomato juice, add the juice squeezed from the donuts and peppers and let it boil for 30 minutes.

4. Add the mushrooms, mix and put the zacusca in jars. Bind and bake for 30 minutes. After they have cooled well, they are placed in the pantry.

Ingredient: 500 g of short pasta (penne, fusilli, macaroni, etc.), 50 g of butter, 100 g of cheese or parmesan, 4 large tomatoes, 4 cloves of garlic, 1 red pepper, 1 tablespoon of olive oil, 2 thighs of chicken or 1 turkey pulp, 2 teaspoons dried oregano, 1 teaspoon salt (if the little one is over a year)
