The chickpeas are hydrated in cold water overnight, then boiled for 45 minutes in salted water until tender.

Cut the onion into juliennes, grind the garlic and slice the chorizo.

Heat 2-3 tablespoons of oil in a saucepan / casserole. Cook the onion, along with the garlic for 5 minutes, over medium heat until soft and slightly brown. Add chorizo, bay leaf and thyme and sauté for a few minutes until golden. Add the boiled chickpeas and paprika, cover with a lid and leave for 10-15 minutes, over medium to low heat.

At the end, add chopped sage, salt, pepper and lemon juice and serve with yogurt and bread.
