Drob (fake)


Because not everyone likes lamb or mutton, I propose a fake drob recipe, as my mother calls it, perfect for Easter. I assure you it is very good!

ingredients
3 parts pork (neck, leg)
1 part chicken liver
2 bunches of green onions
1 link green garlic
1 bunch green parsley
2-3 medium onions
3-4 boiled eggs
2 raw eggs
1 lg cream
salt
pepper
Put the white onion to harden, add the diced pork, adding a little water to boil the meat. When the meat is cooked, add the washed and cleaned chicken liver. Stir a little until the stew decreases. After it cools, it is passed through the mincer, together with a slice of bread, then add the onion, garlic and finely chopped parsley.


! Never give the green through the shredder because it gives an ugly color to the drob!

Add finely chopped boiled eggs, beaten raw eggs, salt and pepper.
The dough can be wrapped in breadcrumbs or dough. I like the dough more because it looks better and is tastier.
The dough can be puff pastry bought commercially or made at home.
Remove the dough from the fridge, knead a little more to soften it and spread it to cover the cake forms. Put the dough in the shape of a cake lined with baking paper and put the filling. The rest of the dough can be made into shapes to decorate the dough.

Bake on medium heat for about 45 minutes.

The dough can be made as follows:
125 g flour, 125 margarine, 125 sweet cheese, salt. All mix and refrigerate for at least 6 hours. I usually leave it overnight.


Method of preparation

I boiled the hearts and the pipettes in cold salt water, in the meantime I frothed them and when they boiled enough I took them out and let them cool.

Separately, in a pan I put the 5 tablespoons of oil and I put the liver until lightly fried, without burning. I took them out and left it to cool.

In the same pan I put chopped onion and a little salt, (but also a little oil as needed) and after it got a nice color I added fish and green onions, I left a few minutes and set them aside to cool .

After the pipettes, hearts and liver had cooled, I cut them into small pieces, put the greens, hardened onions, raw eggs, salt and pepper on top and mixed well until all the ingredients were incorporated.

In a small cake tray lined with baking paper, I put half of the composition after boiled eggs and then the other half of the composition, I leveled it nicely and put it in the hot oven for approx. 40 min.

We clean and wash the onion, finely chop it and heat it in 2-3lg of oil. When the onion is ready, add the green onion over the hardened one and mix, turn off the heat and set aside.

When the meat is ready, cook it through a mincer or use a robot. Over the minced meat add finely chopped greens, onions, 3 eggs, tablespoons of flour, salt and pepper.

We mix and taste if we need something else if we don't put the composition in a greased and lined tray with a little flour / breadcrumbs. Level the meat well and grease with a beaten egg.
Bake in the preheated oven for about 30 minutes. We cut after it has cooled.

The recipe is similar to puff pastry lamb, the only difference being the presentation. If you do not have a special muffin tray at hand, you can wrap the dough in the form of bags. They are very handsome. The puff pastry lamb can sit in a place of honor, along with other appetizers, at any festive meal.

Ingredient:

1 kg of cooked lamb organs (lungs, liver, spleen, kidneys, heart),
a few pieces of fatty meat (optional),
125 g butter,
2 bunches of green onions,
1 clove of green garlic,
1 bunch of parsley or dill,
100 g breadcrumbs,
4 raw eggs,
salt pepper,
2 sheets of puff pastry,
2 tablespoons sour cream or an egg to grease on top

Preparation:

The organs are boiled, left to cool, then cleaned of skins, bones and stingers and then passed through the mincer.

Peel and finely chop the onion, garlic and parsley, then mix all together with the ground organs and the 4 eggs. To reduce the smell and taste specific to lamb, put as much greenery as possible.

Add salt and pepper to taste.

Preheat the oven to 350 degrees F (175 degrees C).

Roll out the dough and cut into 12 squares with a side of 4 cm each.

In the middle of each square of the dough put a tablespoon and a half of baking soda. The dough is rolled into a bag. If you want to give a more pleasant appearance to the puff pastry, before putting them in the oven, grease the dough wrapped on top with cream or beaten egg.

Bake in the oven for approx. 35 minutes. When ready, the dough swells and unfolds into sheets.

Serve hot, along with cheese, olives, salads, radishes, etc. Good appetite!

Chicken liver with greens

Drobul is a dish that people generally associate with lamb and Easter. For those who do not eat lamb, I can prepare chicken liver. Chicken organs, meat from the thighs and a lot of greens are used in this preparation. It is a recipe that is easy to prepare and does not require much skill, and the result is delicious.

Ingredient:

• 800 gr pipote and hearts
• 800 gr of liver
• 3 boneless thighs
• 2 potatoes
• 3 bunches of green onions
• 2 dried onions, larger
• 12 eggs
• 3 links of dill
• 2-3 bunches of parsley
• 2-3 bay leaves
• 15 peppercorns,
• 100 ml oil
• salt and ground pepper.

Method of preparation

Boil the peeled potatoes, pipots and hearts in a pot and add the peppercorns and bay leaves. After thirty minutes, remove the potatoes and add the thighs and liver. Boil together for another twenty, twenty-five minutes. Remove from the heat and drain, then allow to cool slightly.

Finely chop the dried onion and fry in oil. When softened, add finely chopped green onions and greens to soften slightly. After removing from the heat, allow to cool slightly. You can choose the option in which the dried onion is also replaced with green onions, depending on your preferences.

All the ingredients are passed through a blender, not too much to keep the larger pieces in the pipette. The resulting composition is mixed with eggs, which we beat a little in a bowl until smooth. Add the salt and ground pepper and place in a greased pan lined with flour, not very high, to bake inside. Put in the oven for about forty minutes on low heat.
