Peel and wash the vegetables.
In a pot with a capacity of 3 l, fry the onion, green and red bell peppers in a little hot oil, finely chopped and the carrot on the large grater. Add salt and diced tomatoes, fill with water and bring to a boil. When it boils, add the broken or chopped bean pods and diced zucchini.
When the vegetables are cooked, add the borscht, to taste, I usually put about 500 ml of borscht in a 3 l pot of soup.
Remove from the heat and add finely chopped fresh greens.
Serve with red onions.
