PREPARATION OF THE LEVANTICA ICE CREAM RECIPE:

1. Wash the lavender flowers, boil water with milk and sugar, add 20g. lavender flowers. Let it infuse in the covered pan for 5 hours.

2. Filter to retain lavender flowers.

3. In a bowl, beat the whipped cream and incorporate it into the lavender-scented milk. Put it in the freezer for 1 hour. Stir several times to prevent the formation of ice needles.

4. Serve in ice cream cups and garnish with whipped cream.

The more light and dry weather it benefits, the more essential oils it accumulates in its leaves and flowers.

Lavender is still known today and used especially in the cosmetics industry for perfuming toilet water and soaps. There is almost no fragrance that does not include lavender oil, along with the essence of roses. In many countries around the Mediterranean,
lavender is grown on large areas to extract the precious oil.

In the south of France, at the gates of farms, as advertising and for sale, there are often belly-filled glass balloons filled with an indigo-colored liqueur with amethyst reflections. In fact, from the incomparable and dizzying scent that rises at noon in the waves of the hot grass in the Provence, on the Dalmatian coasts, on the Greek hills or in the meadows of the Caucasus, as well as on the shores of the Maghreb (Tunisia, Algeria, Morocco), he perceives the delicate, penetrating scent of lavender clearly. Pleasant to people, but not to moths, this perfume also has the role, together with that of sulphine flowers, to give the laundry a pleasant breath of cleanliness and freshness and to remove the harmful butterflies.

Lavender tea is famous for its tonic, calming, refreshing effect, which is why it is recommended in migraines, headaches, anxiety, rheumatism and even in kidney and liver diseases or to combat bloating. To make it even more pleasant, you can add a few acacia or jasmine flowers and a sprig of basil.


Coconut flavored vegan ice cream

Ingredients for 6 servings:

  • 450 ml of coconut milk
  • ½ cup of sweetener - it can be honey, maple syrup or even sugar
  • ¼ teaspoon of salt
  • 2 tablespoons cornstarch
  • 1 ½ teaspoon of vanilla essence.

Method of preparation:

  1. Shake the coconut milk well, keep the cup aside and boil the rest in a saucepan. Add the sweetener, but also the salt and heat over medium heat, stirring occasionally. After the sweetener melts, you can incorporate the cornstarch, but after dissolving it first in half a cup of preserved coconut milk. Mix lightly with a spatula in the milk saucepan as you add the starchy milk.
  2. After 7-8 minutes, you will notice that the texture of the composition has thickened. This is the time to take the pan off the heat and add the vanilla essence.
  3. Leave the ice cream composition at room temperature until it cools, then transfer it to a bowl and put it in the freezer for at least 4 hours. After the composition freezes, put it in a blender and turn it into a creamy ice cream. Serve immediately.

Vegan chocolate ice cream with avocado

Ingredients for 4 servings:

  • 2 baked avocados
  • 120 ml of unsweetened almond milk
  • 2 tablespoons coconut butter
  • 3-4 tablespoons of sweetener of your choice - honey, maple syrup
  • 4 tablespoons cocoa powder
  • 1 teaspoon vanilla essence.

Method of preparation:

  1. Peel a squash, grate it and put it in the blender with the other ingredients. Turn on the blender and turn the composition into a homogeneous one.
  2. Transfer the composition to a bowl, which you will put in the freezer for 3 hours, but with the specification that every half hour you will have to take out the ice cream and mix it well with a spatula. After 3 hours, you can consume it.

Banana ice cream with strawberries

Ingredients for 1 serving:

  • 1 cup frozen strawberries

  • 3 frozen bananas
  • 3 tablespoons coconut milk
  • 1 teaspoon vanilla essence.

Method of preparation:

  1. Put the almonds in the blender together with the pecans, cinnamon and cardamom and turn them into a fine powder. Add 2 dates and turn on the blender again. Then transfer half of this composition to a bowl and set aside.
  2. Over the blender mixture add the remaining dates, but also water and turn everything into a paste. Transfer this composition to another bowl.
  3. Clean the blender and wipe it well, then put the frozen bananas, coconut milk and vanilla essence in it and turn it into a paste that you will add in the second bowl. Homogenize the ice cream obtained well and serve with the crispy topping from the first bowl.

Vegan cranberry ice cream, made of 2 ingredients

  • ½ cup of frozen blueberries.

Method of preparation:

Raspberry jam and lavender

1. Put two empty plates in the freezer. At the end, you will use them to see if the raspberry jam is ready.

2. Put the raspberries in a larger pot. Tie the lavender flowers in gauze and place them over the raspberries. Put the pot on the fire and stir from time to time, until the raspberries begin to leave their juice. Continue to boil for 10 minutes, until the fruit begins to soften.

3. Take the pot off the heat, lift the lavender and squeeze it as best you can, then discard it. Add the sugar and stir until it melts.

4. Put the pot back on the fire and bring to a boil. Boil for 5-6 minutes until the jam temperature reaches 105 degrees Celsius.

To test the maximum boiling point, take a little raspberry jam from the pot and place it on a cold plate in the freezer. Put it back in the freezer for a few minutes, then put your finger on the jam on the plate. If it makes wrinkles, then it means that the jam is ready. If it is still soft, then cook for another 1-2 minutes. Repeat the plate test if you think it is necessary.

After you are sure that the jam has been made, remove any burns, put the butter and mix. Let cool for 15 minutes.

5. Pour the raspberry jam into sterilized jars. Put the lids or cellophane on, making sure you seal well and no air enters. Allow to cool and store in the pantry.

1. Pour the whipped cream into a saucepan. Boil it. Take the pan off the heat and add the sugar. Stir until the sugar dissolves, then add the lavender flowers. Let the lavender infuse for at least 30 minutes, or until the cream is already cold. Remove the lavender flowers from the mixture.

2. Mix with vanilla pudding and add a splash of dye to the composition. Pour the mixture into a container suitable for freezing and put it in the freezer, taking care to mix it from time to time, to freeze evenly. You can also prepare the mixture in an ice cream machine according to its instructions, then transfer it to the freezer.

3. Remove the ice cream from the freezer 10-15 minutes before serving. This way you give it time to soften and it is easier to take with the cup.
