Greek meatballs with zucchini - a simply amazing recipe! Save it and try it!

Greek meatballs "Keftedes" are a Mediterranean dish prepared from minced meat with vegetables, which are served cold with tzatziki sauce. In the original recipe, the meatballs are fried, but we decided to try the baked version. Children eat them with great pleasure!

INGREDIENT:

-2 tablespoons tomato paste

-salt and ground black pepper - to taste

-mint and dried basil and basil.

METHOD OF PREPARATION:

1. In the minced meat, add the zucchini (best peeled) and grate it, cut the onion and garlic into small pieces.

2.Then add the breadcrumbs, tomato paste and eggs.

3. Season the composition with spices and salt, then mix it very well.

4. Shape medium meatballs and place them on the tray lined with baking paper and greased with oil.

5.Insert the tray in the preheated oven to 170-180 ° C for 20 minutes.

As I said, serve hot or cold pumpkin meatballs with tzatziki sauce.

400 g Greek yogurt 1 cucumber (large) 4-5 cloves of garlic juice of 1/2 lemon 1 bunch dill salt pepper. Peel and grate the cucumbers, sprinkle with salt, stir and set the cucumbers aside for 10 minutes.

Here is a recipe that I can't give you exact amounts, as I usually do. Zucchini can be bigger or smaller, I recommend you adjust the consistency of the dough as you feel the need, by adding almond flour or psyllium bran or water. The dough must be thick enough to be taken with a spoon and put in the pan.
The meatballs come out full of taste, go great as a side dish or taken on a picnic, on a trip, in the work package.

  • 1 medium zucchini
  • salt
  • 1-2 eggs
  • 1-2 tablespoons of psyllium bran
  • 2-3 tablespoons of almond flour
  • a teaspoonful of baking powder
  • chopped dill, onion / garlic powder
  • coconut oil for frying

The washed zucchini, and possibly peeled, is passed through a large grater and sprinkled with salt.

After about 10 minutes, drain the leftover water and put it in another bowl. Mix well with the rest of the components except the oil. Leave for another 10 minutes to swell the bran. A suitable thick dough must come out to be taken with a spoon. If necessary, adjust the density by adding almond or psyllium flour or a little water.

Heat a tablespoon of coconut oil in a pan, then place the meatballs with the spoon in the pan.

Bake on low heat, under the lid, for about 3-4 minutes on each side, until golden brown.

They are removed and can be served immediately, but they are good and cold. I go well with cream.

These turkey and zucchini meatballs are specially made for my son. Or rather specially designed for my son who makes some fads for food. Recognize.

It's difficult with the little ones. Some are more edible, more greedy. Others barely taste the food. My child is unfortunately among the second category.

He has some favorite foods that he would ask for day and night, but some he wouldn't even see.

The meat is washed, the skins, tendons, blood clots are chosen and wiped, then chopped.

Pumpkin / Zuchina meatballs and canned tuna

We wash the zucchini and cut off its heads, then we put them on the large grater and squeeze them in our fists to eliminate excess water.

We open the tuna box and drain the oil that we will not use (you can also use tuna in natural juice and pour the juice).

Put the bread soaked in water and then squeeze it into your fist.

In a large bowl put the grated and drained zucchini, soaked and drained bread, tuna, salt, pepper and dill (if you have fresh better) chopped, grated cheese.

Add an egg and mix. If necessary, add the next egg and knead as it is done for any type of meatballs.

If you find the composition too soft and flowing, add a little breadcrumbs or flour and mix to bind (I didn't need it).

Form the meatballs with a slightly wet hand.

Roll them in flour (or breadcrumbs) and then place them in the pan with already hot oil and fry them on both sides.
Note:
- If you want you can scald the pumpkins and then crush them with a fork instead of grating them raw.
- do not mix the composition too much because it is much better if there are more pieces of tuna here and there, they will feel distinctly in the mouth when you bite the meatball.

Ingredient: 4 medium zucchini, two medium onions, 2 cloves of garlic, two tablespoons of melted butter, half a cup of cooking cream, a cup of grated Gruyere cheese and a quarter cup of grated Parmesan cheese, half a teaspoon of salt and a quarter teaspoon of pepper.

Preparation: cut the zucchini into slices of about 5 mm. Chop the onion and fry in butter until soft. Add the crushed garlic and leave for another minute, then add salt and pepper. In another pan, heat the cream, add the Gruyere cheese and half the Parmesan cheese and leave it on the fire, stirring, until the cheese melts and you get a cream.

Place the slices of zucchini in a pan greased with butter or oil, pour over them, evenly, the mixture of onion and garlic, then the cheese and cream. Sprinkle the remaining Parmesan cheese and put the tray in the hot oven until the pudding is browned. You can sprinkle green onions before serving or you can serve it with vegetables, as desired.
